Amarone is a dry passito red wine produced exclusively in Valpolicella, a hilly area of the Veronese Pre-Alps in the Veneto region and includes the entire mountain part of Lessenia and precisely the municipalities of San Pietro in Cariano, Fumane, Sant'Ambrogio di Valpolicella, Marano di Valpolicella, Negrar di Valpolicella, Pescantina, Sant'Anna d'Alfaede.
Amarone Della Valpolicella Bio DOGP Conte Gastone is produced from native organic Corvina, Corvinone and Rondinella grapes grown on clayey-marble soil at a height of 180 meters in height.
The vinification takes place after a careful selection of the grapes, harvested manually and arranged in wooden boxes to dry in the fruit cellar for 3 months under careful control of both temperatures and humidity. During this winemaking process, the cold maceration is extended for another five days, after which the alcoholic fermentation process begins in steel containers. The subsequent malolactic fermentation always takes place inside the steel container to be subsequently aged in French oak barriques and tonneau for another 2 years. A further 12-month refinement is carried out before being marketed
